Simple Spring Chicken

Simple Spring (or Summer) Chicken from Paleo Leap


  • 4 skinless, boneless chicken breasts;
  • 1/2 cup lemon juice;
  • ½ tsp. onion powder;
  • 2 tsp. Italian seasoning;
  • 2 garlic cloves, minced;
  • Sea salt and freshly ground black pepper

Simple Summer Chicken preparation



  1. Preheat your grill to a medium-high heat.
  2. Place the chicken in a marinating container (glass or ceramic; not metal) and drizzle with the lemon juice, onion powder, Italian seasoning, garlic, and season each breast to taste.
  3. Let the chicken marinate for 20 minutes.
  4. Cook on the prepared grill for 10 to 15 minutes per side, or until cooked through.
  5. Serve warm with extra lemon wedges.

    Group Class Programming for Friday, April 21, 2017:

    Complete as many rounds and reps as possible in 15 minutes of:
    200 meter Run
    30 wall-facing dumbbell Squats (15/10#)
    *rest 1 minute after every Round

    5 Rounds for time of:
    300 meter Run
    30 dumbbell Hang Squat Cleans (25/15#)

    5 Rounds for time of:
    400 meter Run
    15 Hang Squat Cleans (95/65#)
